El Matador Los Cabos Restaurant, The Best Restaurant in los cabos

Bullfighting

Pablo (owner of “El matador restaurant”) has been spending his life in confusión. He is not sure if he is a bullfighter or a chef. Pablo has one uncle who is a matador and another who is a chef; one taught him to fight bulls and the other how to cook.

Growing up in Mexico City, Pablo began bullfighting at age 14 and was a professional until moving to Los Cabos in 1988, bringing with him passion for bulls and cuisine. Since then, he has represented Los Cabos in non-professional festivals against international bullfighters in Mexico in such places as Aguascalientes, Leon, Mexicali and recently in Guadalajara at the famous “Plaza de Toros” called Nuevo Progreso.

“Bullfighting culture for us, the bullfighters… the magic, the mysticism comes from inside; some religions are waiting for God to illuminate them, they want divine inspiration. For bullfighters, like flamenco dancers the philosophy is don’t wait for the divine touch… you take it, the energy, from the deepest part of your heart and bring it out, that is the way you make the expression”

Tío Velazquez (Pablo’s uncle)
